@myeverydayordinarylife: Autumn Soup in a Pumpkin 🍂 Such a warm and comforting meal! We had this last night for dinner. It was election night and the snow was falling - so exciting! You can make pretty much any kind of soup and put it in a pumpkin to serve. I’ve made chili, a creamy soup, and now this one. They’re all so good! And I like scraping off bits of pumpkin from the inside of the pumpkin to add to mine but the kids would have none of that. Also, I wanted to add kale at the end but I knew that wouldn’t go over very well and I wanted everybody to eat it and enjoy it and they sure did! 😆 I’ll share this particular soup recipe soon but here’s how to prepare your pumpkin to hold soup. 🍁 Wash your pumpkin, cut the top off, and clean the inside out. Drizzle the inside of the pumpkin with olive oil and sprinkle with salt. Place on a pan and bake in 350 degree oven for one hour or until soft where you can poke it with a fork but not too soft that it’s falling apart. Meanwhile make your soup. Once the pumpkin is cooked, ladle the soup into the pumpkin and serve, scraping off bits of pumpkin on the inside of the pumpkin to add to the soup.
