I grew up in my family’s businesses my whole life so I think I have a story to share about each and every takeaway/restaurant dish. This one is super nostalgic to me, no matter what happened during service and the amount of my times my dad was the classic “angry Chinese old man”, mum would always make sure we were well looked after and had our beef and broccoli after and before service - beef for protein and broccoli for health. Here’s to all the mums/mother figures out there 🥦💗 📍 Wok Inn, Sheffield (S12 3DZ) For the beef: 2 pieces of beef steak 1/2 tbsp bicarb soda 1/2 tsp white pepper 1/2 tsp salt 1 tbsp oyster sauce 1 tbsp cornstarch 1 tbsp shaoxing wine For the veg: 1 onion 2 garlic cloves 1/2 carrot 1 broccoli  2 spring onion For the sauce: 1 tsp chicken bouillon powder  1 tbsp oyster sauce 1 tbsp shaoxing wine 1 tbsp dark soy sauce  1/2 tbsp sesame oil 1/2 tsp white pepper 1 flat tbsp cornstarch mixed with 3 tbsp water 120ml water Chefs tip: the secret to getting beef super tender like restaurant style is adding bicarbonate soda to and letting it marinate for at least 20 mins Slice the beef into thin pieces and season with bicarb soda, white pepper, salt, oyster sauce and cornstarch slurry. Leave to marinate for at least 20 mins. Meanwhile, chop your onion and broccoli into small pieces and slice your garlic, carrot and spring onions. Prepare you sauce by mixing all the ingredients in a bowl. Bring a pot of water to boil then add the broccoli and carrot along with a tablespoon of veg oil and blanch for just two minutes. Strain and set aside. Add 100ml of vegetable oil to a clean wok on medium-high heat and precook the beef for minutes. Once cooked, remove and set aside. Remove the oil, then add the beef back to the wok along with the onions and garlic. Stir fry for two minutes on high heat then add the carrots and broccoli. Stir fry for another minute.
