@creekside_blessings: Sourdough Scones Recipe Ingredients 1 3/4 cup All-purpose flour 1/4 cup of sugar 1/2 cup cold butter (1 stick), cut into cubes 3 large eggs 1/2 cup active starter (or 1/3 cup discard, 1/2 tap baking powder, 1/4 tsp baking soda) Sparkling sugar (optional- you can use regular sugar but the sparkling adds a crunch) for top of scones just before baking 1/2 cup fresh blueberries ( you can use 1/2 cup of any fruit) Preheat oven to 450°F Add 1 3/4 cup of all-purpose flour and 1/4 cup sugar to food processor and pulse about 5 times (just to mix the ingredients). Cube cold butter into tiny squares. Add to food processor and pulse 5-10 times until butter is mostly incorporated. Add flour-butter mixture to mixing bowl. Combine and gently stir blueberries. Set aside. Mix wet ingredients in a small bowl: 1/2 cup starter with 2 eggs using a whisk or fork. Make a well in your mixing bowl with the flour-butter mixture. Pour wet ingredients into the well. Stir and mix several times with a spatula. Once combined, knead a few times with hands to ensure it's well combined. Place on cutting board/mat and form into a 8 inch circle shape, using your hands to flatten. Using a knife or pastry cutter, cut into 8 even wedges. Place on a lined baking sheet Beat the remaining egg and brush scones lightly. Sprinkle with sparkling sugar just before baking. Bake for about 15 minutes at 450°F.
