RECIPE BELOW AND AT THE END OF THE VIDEO: Makes 15 burritos: 16-24 ounces breakfast sausage (see note) 1 cup small diced bell peppers, any color ½ cup small diced onion 10 large eggs 1 ½ cups milk ¾ cup sour cream 1 teaspoon salt ¼ teaspoon black pepper 30 ounces frozen tater tots, about 7-8 cups 12-15 burrito size flour tortillas 3-4 cups shredded cheese, cheddar, Monterey Jack, etc 1.	Cook the filling: In a large pan on medium heat, cook the sausage, chopped peppers, and onions. Break the sausage into small pieces as it cooks. Cook until the sausage is fully browned and the veggies are soft. Drain the grease. 2.	Mix the eggs: In a bowl, whisk together the eggs, milk, sour cream, salt, and pepper until smooth. 3.	Prep the pan: Lightly spray or grease a 9x13-inch baking dish. Pour in the tater tots to cover the bottom (it’s okay if they overlap a little). 4.	Assemble: Spread the sausage and veggie mix on top of the tater tots. Then pour the egg mixture evenly over everything. 5.	Bake or chill: You can bake it now or cover the dish and put it in the fridge for up to 18 hours. 6.	Bake: When ready, preheat the oven to 350°F. Bake covered for 30 minutes, then uncover and bake for another 25–45 minutes, until it’s golden, bubbly, and cooked through (it shouldn’t be runny in the middle). 7.	Make the burritos: Let the casserole cool slightly if you’re freezing burritos. If eating right away, scoop about ½ cup onto each tortilla. Add shredded cheese, then fold and roll up like a burrito. Serve warm with toppings like avocado, sour cream, or salsa—or just enjoy as is! #EasyMeals #MealPrepM#MealPrepMagict#BreakfastHacke#FreezerMealsC#TaterTotCasserolet#BreakfastBurritosd#MakeAheadMealsd#TikTokMadeMeCookItn#FamilyDinneriendlyMeals
