Eggplant Cordon Bleu | Crispy, Cheesy, and Perfectly Golden A fun Italian twist on the classic cordon bleu. Layers of soft roasted eggplant, savoury ham, and melty mozzarella — breaded and fried until golden. Crunchy outside, cheesy inside — perfect as an entrée or snack. Ingredients (2–3 portions): • 1 large eggplant • Sliced ham (enough for each sandwich) • Mozzarella cheese (sliced or shredded) • Breadcrumbs • Eggs • A splash of milk • Salt to taste • Frying oil Instructions: Slice eggplant into 2cm thick rounds and oven-bake at 200°C for 10–15 minutes. Let cool, then make a “sandwich” with one slice of eggplant, ham, mozzarella, and another slice on top. Dip each in beaten egg with milk and salt, then coat in breadcrumbs. Deep fry for about 5 minutes until golden and crisp. Serve hot and enjoy every cheesy bite.
