Sri Lankan Potato Curry (Ala Curry) Ingredients 6 medium-sized potatoes, peeled and cut into 4 pieces (as shown in the video) 1 large shallot or 5 small shallots, thinly sliced 3 green chillies 20 curry leaves 2-3 pandan leaves 1 teaspoon fenugreek seeds 1-inch cinnamon stick ¼ teaspoon black pepper powder 1 teaspoon chilli powder 1 teaspoon raw Sri Lankan curry powder ½ teaspoon turmeric powder 4 cloves garlic, sliced ¼ lime juice (optional) Roasted curry powder, to sprinkle ½ cup thick coconut milk 1 cup water Salt, to taste Method Add all spices (except roasted curry powder and lime) to a clay pot. Mix with 1 cup of water and ¼ cup coconut milk. Cover and cook over medium heat until the potatoes are tender and the liquid thickens. Add the rest of the coconut milk and keep stirring constantly to avoid curdling. Once well combined, add lime juice, mix, and remove from heat. Keep mixing. Sprinkle roasted curry powder on top.
