Staying at Element Austin Downtown was a game changer because they have a kitchen and fridge, which allowed me to take a break from eating restaurant food and make my own delicious meal at the hotel! We made pumpkin alfredo and it was so nice to be able to not worry about going out to eat! ❤️ PUMPKIN ALFREDO avocado oil 1 sweet onion 1 tsp garlic powder 1 tsp sage 1 tsp nutmeg dash salt 1 can pumpkin puree 3/4 cup coconut milk 1 cup chicken broth 1 box pasta dairy-free parmesan cheese Add oil to a large stock pot or deep pan. Chop onion and add to pan along with spices and salt. Stir in pumpkin, coconut milk and chicken broth. Add in pasta and bring to a boil. Cover and simmer for about 20 minutes or until pasta is soft.
