You actually get a dose of chromium each time you cook on stainless steel, but its miniscule after repeated use. But when new the dose is high, you can take out alot of the initial chromium by heating

You are suppose to wash the pans before first time use. It has a wax layer so it can be safely given to customer without damage. Also other random stuff on the pan from manufacturing.
