@stephanieizard: Girl & the goat cauliflower…. On the menu for I think the first 8 years we were open! I remember creating this dish about fifteen years ago… all the textures and cheese and pickled peppers…. Reminds me of roasted cauliflower my mom made when I was a kid. The crunch butter is the key…. The panko toasts in the butter and just coats the outside of the cauliflower. Yummm. 🧈For the Crunch Butter: 1 c softened butter 3/4 c panko 1/2 c finely grated parm A few cloves garlic confit, smashed or minced 1 t salt 😋 For the Cauliflower: 1️⃣Remove core of cauliflower, and cut in to slices (about 1cm) 2️⃣Heat Saute pan with a splash of oil over high heat. Add cauliflower, stir to coat with oil and season with salt and pepper. 3️⃣Once starts to lightly brown, add in big spoonful of crunch butter….let the butter start to melt on the cauliflower. It will help steam it to tender, then it will brown on the outside. 4️⃣Add pickled peppers and preserved lemon so flavor can infuse. (If you don’t have preserved lemon, just buy them since Turkey day is around the corner!) 5️⃣When cauliflower is tender, sprinkle in more cheese and nuts. Toss to coat. 🕰️(At this point you can hold on a tray to reheat for serving!) 6️⃣Garnish with torn mint and a bit more cheese (because cheese makes everything yummy)
