@chacekitchen: Spicy herby chicken meatballs: 1 lb ground chicken 1/2 cup bread crumbs 1 egg 1/2 shallot, diced 1 jalapeno, diced 2 tbsp parsley, chopped 2 tbsp chives chopped 2 tbsp dill, chopped 6 cloves garlic, minced 2 tbsp chopped calabrian chili 1 tsp lemongrass paste 1 tsp salt ½ tsp pepper ½ tsp onion powder ½ tsp garlic powder Method: Add all ingredients to a bowl and mix until combined, but don't over mix. Shape into 1 inch balls and place on a lined baking sheet. I coat my hands in olive oil first to prevent it from sticking to my hands. Bake for about 11-12 minutes at 425 degrees. I use a meat thermometer to double check they have reached 165 degrees internal temperature. Pepperoncini ranch: ¼ cup mayo ¼ cup greek yogurt 1 tsp buttermilk 1 tbsp dill 1 tbsp chives 2 tbsp pepperoncinis 2 cloves garlic Juice ½ lemon Additional buttermilk (if needed) Method: Add all ingredients to a jar and use an immersion blender to blend. You can also use a regular blender.
