Strain and set aside.  -Over medium heat, melt butter. Once butter is melted, add flour and mix/whisk well until it forms a roux (should be smooth and pasty consistency) -Add beer and mix for a minute or so. It will foam up a bit and then some of it will cook oft. add milk and mix for another few minutes until combined and it starts to thicken add mustard, Worcestershire sauce, and seasonings. -Reduce heat to low (or turn off completely if your stove runs hot). Add cheese a little at a time and mix until melted. If heat is too high, your cheese will clump and become grainy texture.  -Let it continue to cook for about 5 minutes or so, stirring frequently. It should continue to thicken up. -Mix in broccoli -Serve over your baked potato! *for the cheese, be sure to get a block and grate yourself. The pre-shredded cheese will not melt the same.
