It needs at least four hours to set so its a perfect dessert to make in advance for stress-free hosting. Ingredients • 250ml espresso or strong brewed coffee (room temp) • 250g double cream • 250g mascarpone (room temp) • 60g caster sugar • Ladyfinger biscuits • 4 tbsp Baileys • Dark chocolate • Cocoa powder Method 1) Make the coffee so that it has time to cool. 2) Beat cream into soft peaks on a medium speed. 3) In a large bowl, beat mascarpone and sugar together to soften the mascarpone. Fold the cream into the mascarpone (gently). 3) Mix the coffee and Baileys together in a shallow dish. 4) Dip a ladyfinger in for 5 seconds, then break to fit into the base of your first glass. Add 1-2 heaped tablespoons of mascarpone cream on top. Cover with a layer of grated chocolate. Repeat with another layer of ladyfinger biscuits, mascarpone cream and grated chocolate. 5) Repeat step 4 with the remaining glasses.
