@shanilcooks: We’re taking that leftover turkey from Thanksgiving and repurposing it into these dairy free individual turkey pot pies. They do require a bit of extra work but come out so good. Recipe below! Ingredients: - 2 tbsp dairy free butter - 1/2 onion, diced - 1 celery stalk, diced - 4 cloves garlic, diced - 1 tsp dried rosemary - 1 tsp dried thyme - 1 tsp ground sage - Salt & pepper - Leftover turkey (to your heart’s content) - 1/4 cup flour - 12oz coconut milk (regular/full fat) - 1/2 cup chicken stock - 2 yellow potatoes, diced - 1 sheet puff pastry, cut into squares - 2 eggs, beaten Recipe: 1. Heat butter on medium heat and cook onion and celery until softened. 2. Add garlic and season with thyme, rosemary, sage, salt, and pepper. Continue to cook for 3-4 minutes. 3. Add flour and combine well, cooking out the raw flour. 4. Add frozen peas and carrots, coconut milk, stock, diced potatoes, and leftover turkey. 5. Bring to a simmer and allow the filling to reduce and thicken slightly. 6. Spoon the filling into 4 ramekins and top with puff pastry squares and top with an egg wash. 7.
