This Butternut Squash Vodka Pasta is basically fall in a bowl 🍁 Ingredients: -2 ish cups roasted squash -1 shallot, diced -1 lb pasta of choice -2 tbsp olive oil -1 can of whole roasted tomatoes, drained  -5 cloves minced garlic -healthy splash of vodka (1/3 ish cup?) -1/2 to 1 lb spicy sausage, crumbled (i used three sausages, removed from casing before cooked) -salt and pepper to taste -red pepper flakes to taste -1/4 cup shredded parmesan -1 cup of reserved pasta water  -1/2 to 1 cup of heavy cream (add less/more depending on how creamy you like it) Instructions: -Start by coating your squash in olive oil, salt and pepper, and roasting in the over until tender. I roasted a full butternut squash (cut in half and roast inside facing up for about 50 min at 425), and then scooped out the insides once it was soft enough. You can also peel/dice the squash first before roasting, or just buy pre-diced squash. You won’t need to cook this as long (I usually do about 35-40 min at 425) -While that is roasting, cook up your spicy sausage in a pan over medium heat (make sure to break it apart and crumble it as it’s cooking) and set aside once cooked through.  -Now is a good time to get your pot of water for the pasta heating up. Don’t forget to salt your water. Once boiling, cook your pasta according to the package. Be sure to save 1 cup of pasta water and set aside before straining.  -In another pan, saute the diced shallot in some olive oil over medium heat until it starts to get tender (about 5 min).  -Add in your garlic, and cook for about 2 more minutes while stirring.  -Add your vodka and let it cook off.  -Add can of whole roasted tomatoes and roasted squash. -Let that cook over medium heat, stirring occasionally, until the tomatoes get nice and tender (about 5 min).  -Add 1/2 cup pasta water  -Blend this mixture until nice and smooth. I used an immersion blender, but since there isn’t enough volume it got a little bit messy.
