@chacekitchen: Soup Series Part 8: French Onion Soup ft. @Chosen Foods 100% pure avocado oil #chosenpartner Ingredients: 2 tbsp Chosen Foods avocado oil 2 tbsp unsalted butter 3 yellow onions, sliced 1 red onion, sliced 1/2 cup dry white wine 6 cloves garlic, minced 2 tsp salt ½ tsp thyme ½ tsp parsley ½ tsp basil ½ tsp oregano ⅓ tsp pepper 2 tbsp balsamic vinegar A few dashes worcestershire sauce 3 tbsp flour 5 cups beef stock Parmesan rind Croutons Shredded gruyere cheese Method: In your pot, heat up 2 tbsp Chosen Foods avocado oil and 2 tbsp butter over low heat. Add onions to your pot and caramelize. Sprinkle with a little salt. You will saute low and slow, stirring every 5 minutes or so, until the onions caramelize and start to look translucent golden brown (this took me about an hour). As you get closer to the end, you will want to stir frequently so the onions do not burn. Add white wine to deglaze the pan and scrape up any bits of flavor stuck to the bottom. Add garlic and saute for a few minutes before adding balsamic vinegar, worcestershire sauce, and seasonings and mixing in. Add flour, mix well and saute for a few minutes or until flour cooks off. Add stock and parmesan rind, cover, and let simmer for about 20 minutes. Remove parmesan rind before ladeling into your bowl. Set the oven to broil. Ladle soup into your bowl, top with croutons and shredded gruyere cheese. Broil for a minute or two, or until the cheese is nice and melty. Watch closely so it does not burn. Enjoy! For the croutons: Cut baguette into cubes. Spray with Chosen Foods 100% pure avocado oil spray, season with salt and pepper, and then bake at 400 degrees for about 4 minutes (or until desired crunchiness). #soup #soupseason #souprecipe
