Settle this for me: Is chili a soup? Please discuss ⬇️ DENSE BEAN SOUP  INGREDIENTS 4 tbl olive oil 1 1/2 lb chicken breast or chicken thighs 2 cans of chickpeas drained but not rinsed 1 large yellow onion 6-8 cloves of garlic  2 tsp ground coriander 8 cups bone broth 6 sprigs of thyme  1 large butternut squash (about 6 cups) 2 cups curly kale, stems removed Salt and pepper to taste  2 tsp red chili pepper (optional) METHOD Season the chicken with salt and pepper. Add olive oil to a large pot and heat over medium high heat. When hot add chicken and sear until browned 2-3 minutes each side. You aren’t cooking through just browning it.  While the chicken is cooking finely chop onion and garlic. Remove chicken and add the onion and garlic, cooking for 6-8 minutes and stirring occasionally so the onion doesn’t burn.  While the onions are cooking chop the butternut squash into 1” cubes. When the onion turns translucent add the coriander (and red chili flakes if using), and stir for one minute to toast.  Then add butternut squash, chicken, stock, thyme, and chickpeas to the pot. Cover and let cook for 20 minutes at a low boil. Scrape any foam off the surface and discard.  Remove the chicken and check that it has been cooked all the way through before shredding. Then set aside.  Chop and fester the kale then stir it in. Scoop 2-3 cups of the stock out of the pot, getting an even mix of broth, veggies and beans. Blend in a blender or use an immersion blender then return to the pot.  Add chicken back in, taste to add more salt as needed.  Serve immediately or save and reheat to serve up to four days later.
