@erekasfood: For episode 9 of ItaLEAN I've whipped up a 20 minute ROASTED STUFFED PEPPER DINNER that is light, satisfying and absolutely gorgeous! Serving dish from Ingredients: 7 bell pepper 1 tbsp olive oil 1 lb ground turkey 96% lean ¾ tsp salt 1 tsp paprika ½ tsp garlic powder 1 onion, diced 3 tbsp chopped fresh parsley 1 bundle scallions chopped 7 ounces burrata 1 ½ cups croutons 2 tbsp extra virgin olive oil Instructions: -Preheat oven to broil -Cut the pepper in half, deseed and place them onto a baking sheet. Lightly coat the peppers with the olive oil and broil on the middle rack for 4 minutes. Transfer to the top rack and broil for 3 minutes or until charred. -Add the turkey to a non-stick skillet and season with salt, paprika and garlic powder. Cook over medium-high heat breaking the turkey down into small pieces as it cooks. When the turkey is no longer pink, add the onions and cook for 3 minutes more.
