@westcoast_foodtok: Preheat oven to 350 F Prepare baking sheet with parchment paper 3/4 cup finely chopped semisweet chocolate 1/2 cup unsweetened cocoa powder 1 tsp espresso powder 1/2 cup unsalted butter 2 large eggs - room temp 3/4 cup sugar 1/2 packed dark brown sugar 1 tsp salt 2 tsp vanilla 3/4 cup flour Flaky seas salt/finishing salt In a heatproof bowl, add chocolate, cocoa powder, and espresso powder. In a saucepan, melt butter over medium-low heat until bubble, about 3 minutes. Do not let brown. Pour melted butter over chocolate mixture. Let sit so the chocolate softens In a electric mixer bowl, add eggs, both sugars and salt. Using whisk attchment, whisk on medium high speed until mixture is fluffy, about 3 - 5 minutes Stir the chocolate mixture until smooth. With the mixer on low speed, add the vanilla and then the chocolate mixture. Scrape the sides and the bottom of bowl to make sure the chocolate is evenly distributed, then add the flour and mix on low speed. Dont over mix. Use spatula to finish folding in the flour. The dough should be be shiny and look like thick brownie batter. Using small icecream scooper, scoop dough into mounds and place on baking sheet. Bake for 8 minutes until cookies start to soread and have a shiny outer surface. Remove from oven and slam on counter a couple times to create cracked surface on top of cookies. Top with flaky sea salt and return to oven to finish baking for another 2 minutes until slightly puffed. Cool for a couple minutes on baking sheet before transferring to wire rack to cool completely. #brownies #cookie #chewychocolatecookies #chocolate #desserts
