I whipped up a Mexican-inspired hearty bean salad, a zesty salad vinaigrette, healthy peanut butter cups, crispy chocolate-covered peanut butter balls, and wholesome homemade Twix bars. For the salad, I served a vibrant spinach and arugula mix with radishes, creamy avocado, crispy white beans, all tossed in a refreshing citrus champagne vinaigrette, and topped with a smooth cashew lemon herb spread. For the main course, I prepared roasted wild-caught salmon atop a bed of sweet caramelized leeks, paired with a rich Dijon mustard and dill sauce, and served alongside perfectly crispy Brussels sprouts.
