Pan seared chicken + roasted potatoes + zucchini + arugala salad  Pan Seared Chicken -  Start by butterflying your chicken breast and patting dry with a paper towel - Coat in olive oil and seasonings. I used: salt, pepper, onion powder, garlic power, paprika, lemon juice, and lemon zest. - Heat up a few tbsp of neutral oil (I use olive oil) in your pan over medium high. I use a meat thermometer to check if it is done. Roasted Potatoes - I quartered some Yukon gold potatoes and coated in olive oil, salt, pepper, paprika, garlic powder, onion powder, dries parsley, and some fresh parmesan. - Bake for 40 ish minutes at 425, checking on them about halfway through to stir up. - Top with some more fresh parmesan at the end if you like. Zucchini: -  Cut Into rounds at in olive oil and seasonings. I used Dan-Os spicy seasoning  -  Saute in olive oil over medium heat for about 5-7 minutes (depending on size of cut) or until they just start to feel tender.
