Try sous vide. Will keep the beef moist while getting the "well done". I would go a bit below a well done temp.

if you want to try this again- without over cooking the wrapping~ cook his portion of meat more before it get wrapped the best way to keep I moist would probably be a crockpot cook or pressure cooker
