Part 5 | A Whisk of Spring 🌸 Lemon Curd Cake 🍋✨ Moist and fluffy lemon cake topped with a luscious cream cheese frosting and creamy lemon curd! The easiest lemon cake of your dreams 🫶 For the Cake:  2 large eggs 200g (1 c)granulated sugar 80g (1/3c) vegetable oil zest of 2 lemons  3 tbsp lemon juice  2 tsp vanilla  80g (1/3c) greek yogurt / sourcream 200g (1 2/3c) all purpose flour  1.5 tsp baking powder  1/4 tsp salt 180g (3/4c) whole milk  Lemon Simple Syrup (optional)  50g (1/4c) granulated sugar 2 tbsp lemon juice (stir together and microwave for 1 minute or until the sugar is dissolved)  For the Cream Cheese Frosting:  115 g (1/2c) room temp butter  65g (2oz) room temp cream cheese  140 (1c )  icing sugar  (using a hand mixer or a spatula, beat together all the ingredients until smooth) Instructions:  1. In a large bowl, whisk the eggs vigorously until foamy. Then add the granulated sugar, whisk for 1 - 2 minutes.  2. Add the vegetable oil, lemon juice, lemon zest, vanilla, and yogurt. Mix until well combined.  3. In a separate bowl, mix together the dry ingredients: flour, baking powder, and salt.  4. Alternate adding the dry ingredients and the milk to the egg-sugar mixture, beginning and ending with the flour. Making sure everything is incorporated before adding the next one. (Flour, Milk, Flour, Milk, Flour)  5. This batter is runny and thats okay (that's why it's super moissst!)  6. Pour the batter to an 8x8 pan lined with parchment or baking paper. Bake at 350F (180C) for  25-30 mins or until a toothpick inserted comes out clean.  7. Let the cake cool in the pan for 10 minutes then transfer to a wite rack to cool completely.  8. Before frosting, brush or drizzle the cake with the lemon simple syrup (optional)  9. Top with that luscious cream cheese frosting and Lemon Curd . Lemon Curd Recipe:  2 egg yolks  2 tbsp lemon juice  50g (1/4c) granulated sugar  40g (2.5 tbsp) butter  Instructions:  1. Combine the egg yolks, lemon juice, and sugar in a saucepan and stir over low heat. Stir constantly until it coats the back of the spoon.  2. Turn the heat off then add the butter, stirring until the all the butter has melted and everything is well combined.  3. Pour over a strainer and cover with plastic wrap (the wrap should be touching the surface of the curd)  4.
