@creamy_confusion: 🐷Porchetta Sandwich Nothing better than some leftover meat from Christmas being shoved into a sandwich. This will honestly work with leftover chicken, turkey or even lamb. Done in a very classic Italian deli style sandwich, this is so delicious, but it’s pretty rich so I recommend sharing with someone you like. 1 small square of focaccia Green pesto Mix of chilli and mayonnaise 2 long pickled chilled (rough chopped) 1/3 cup sun-dried tomatoes 1 cup rough cubed porchetta (crackling and all)* Big handful rocket leaves (washed) 50gm grana padano (finely grated) Half the focaccia horizontally through middle. Add green pesto to one side and chilli mayonnaise to the other side. Top mayo side with pickled chilli, sun-dried tomatoes, porchetta, rocket and grana padano. Optionally quickly grill the cheese to get a bit of melt, but not necessary. Top with pesto side and cut in half.
