I've never cold proofed sandwich bread. I see you listed the ingredients, but do you do folds, bulk ferment, shape, let rise and then cold proof? or cold then shape and let rise?

i tried without putting anything in the pan (no paper, no oil, just put the shaped dough in) and it still didn't stick. not sure if it's the pan but i have a suspicion that it won't stick to any pan.

In culinary arts my teacher just taught us to cut the paper so we can fold it to the pan, I wont lie it was a lot of waste... I'm so glad to have found this.

parchment paper has infinite uses in the kitchen. I make sure I always have rolls of it more than I do cling film or aluminium foil. your loaf looks fantastic
