Happy National Eat Your Beans day! 🫘  3 cans navy beans, 19-ounce cans, drained and rinsed 1 onion, diced 1 red bell pepper, diced 2 celery stalks, diced 4 tablespoons soy sauce 4 tablespoons yellow mustard 4 tablespoons molasses 1/2 cup brown sugar 1 teaspoon salt 1/2 teaspoon ground black pepper 4 tablespoons tomato paste 2 tablespoons apple cider vinegar 1/2 teaspoon cumin 1 teaspoon smoked paprika 1/4 teaspoon cayenne pepper 1 tablespoon olive oil Directions: 1. In a large Dutch oven or pot with a tight-fitting lid, heat the olive oil over medium heat. Add the onion, bell pepper, and celery, and sauté until softened, about 5-7 minutes. Do not brown the onions.  2. In the meantime, whisk together the soy sauce, yellow mustard, molasses, brown sugar, salt, black pepper, tomato paste, apple cider vinegar, cumin, smoked paprika, and cayenne pepper. Set aside. 3. Once the onions, bell pepper, celery are cooked, add the beans to the pot. Stir to combine.  4. Pour in the sauce mixture and stir to fully coat the beans.  5. Reduce the heat to a simmer and place a lid on the pot.  6. Simmer for 45 mins-1 hour. At this point, remove the lid and stir. If you prefer a saucy baked bean, then serve and enjoy! If you feel there's too much sauce for your liking, continue to simmer without a lid for 10-15 minutes until some of the sauce is reduced. Stir often - the more the sauce reduces, the higher the chance of burning the beans because of the sugar content. Serve immediately.
