👌 bro trying to keep secrets 🙊 hold time is also rest time. I am pretty sure you guys hold that 150°-155° for longer than 1hr.

He is talking about the time spent out after hitting 203ish. U need to let the brisket cool down before putting it in a cooler or it will keep cooking and be mushy.

I burp it when pulling it off and rest it until it gets down to 150° and slice it. Always turns out great.
