The recipe is below. 🫐🫐🫐 1 cup (200 grams) granulated sugar, plus more for sprinkling  2 tablespoons lemon zest, from about two lemons, optional  ½ cup (118 ml) vegetable oil 1 teaspoon vanilla extract 2 large eggs, room temperature 2 tablespoons freshly-squeezed lemon juice, optional ½ cup (120 g) whole milk yogurt, room temperature 2 teaspoons baking powder 1/2 teaspoon kosher salt 1½ cups (195 g) all-purpose flour 1½ cups (210 g) blueberries, fresh or frozen, divided Heat the oven to 350°F. Grease an 8x8x2-inch square baking pan with cooking spray or softened butter. Line the bottom with a long sheet of parchment paper that extends up and over two opposite sides of the pan (like a cradle for your cake). Rub the lemon zest into the sugar with your fingers in a large bowl until fragrant, if you are craving a lemon blueberry cake. Whisk in the oil and vanilla for 30 seconds. Whisk in the eggs, one at a time, and then the lemon juice, again, if you are craving a lemon blueberry cake, and the yogurt. Sprinkle the baking powder and salt into the bowl, one at a time, vigorously whisking after each. Gently fold in the flour, adding 1 cup (140 g) of the berries when there are still a few streaks of it remaining. The batter will be lumpy.  Scrape the batter into the prepared pan, smooth the top, and arrange the remaining ½ cup berries over the top of the cake Lightly sprinkle with granulated sugar and bake for about 40 minutes, rotating at the halfway point. The cake is done when a wooden skewer inserted in the center comes out with a moist crumb or two. Let cool for about 20 minutes, until you can safely lift the cake out of the pan by the parchment overhang without burning yourself. Run a butter knife around the edges if it resists.
