Preheat your oven to 160°C and line a baking sheet with parchment paper. 2. Place one sheet of phyllo pastry on a clean work surface and brush it with melted butter. Sprinkle fresh thyme leaves over the surface. Layer the second sheet of phyllo pastry on top. 3. Gently squeeze the layered phyllo pastry in the middle, creating a bow shape. 4. Place a piece of feta cheese on each side of the squeezed center. 5. Fold the right and left sides of the phyllo pastry inward, forming the bow shape and encasing the feta cheese. 6. Cut a 1-inch line in the center of one strip of phyllo pastry without cutting all the way through. Place it on top of the bow-shaped pastries to complete the bow look. 7. Brush the tops of the pastries with melted butter for a golden, crispy finish. 8. Sprinkle black and white sesame seeds over the center strip. 9. Bake in the preheated oven for 30 minutes. 10. Drizzle the pastries with honey. 11. Serve the baked feta phyllo pastries warm as a delightful appetizer or snack.
