@xavskitchen: WELCOME TO STEWS FROM AROUND THE WORLD 🌍 This is part 11 and today we’re taking a trip to Poland to make some Bigos 🇵🇱 (4) 1 brown onion diced 50g chopped porcini mushroom 1/4 white cabbage 3 tsp tomato paste 150ml red wine 250g Sauerkraut 50g bacon 150g pork shoulder cubed 100g pork belly cubed 150g beef shank cubed 1 polish smoked sausage 1/2 red apple diced 1 small carrot diced 800ml chicken stock approx* Salt & pepper to taste (1) Heat up a large stew pot on a medium heat, then add your onion and cook for a few minutes until soft. Now add your porcini mushrooms and saute for a further few minutes. Now add your tomato paste and cook for 5 minutes until dark red but not burnt, then go in with some red wine to de glaze.
(2) Reduce the red wine by half, then add your Sauerkraut and mix well, cover and let cook for 15 minutes, while we prepare our meats. (3) Heat up a large cast iron skillet on a medium high heat, then once hot, add some oil and add your bacon to render off some of its fat, then remove. Now add the pork belly, shoulder and beef shank and cook until brown all over then remove. Finally add your polish smoked sausage and cook until for a couple of minutes until brown all over, then remove. (4) Now add all the meats to the pan including the apple, carrots, prunes and stock, then seaoson to taste with salt and pepper and bring to a boil, then simmer for 2 hours until all the meat is tender. Serve with some bread. #stew #bigos #polishfood #poland

Polish people complaining it ain't bigos are blinded by how it's made in their own home or very traditionally. I'm Polish and our bigos changes up every year, wether adding or taking away an ingredient. Yours looks banging tho, would try the recepie

You need to change fresh chantarelles to dried porcini, use smoked plums, dont add carrot, and you need laurel leaf, allspice, peppercorns and juniper berries. Still its A- bigos 👌🏻

if I would do it, i would fry meat, onion, mushrooms, then put brothand shimmer witch cabbage and spices. cook sour cabbage separately, then add it, add tomato paste in the end and optionaly wine.
