Yayyy 💃🏾 Beef Stew, serves 4  - 1 lbs stewing beef, ususlly chuck & round cuts of beef - neutral veg oil, to cook in (better option for high heat & meat) - salt & pepper, to taste  - 1/2 large onion, dinced - 3 garlic, minced - 1 tbsp tomato paste - 1 tsp each: cayenne powder & cumin  - 2 tsp curry powder - 1.5-2tbsp royco mchuzi beef flavour, mixed with some water - 2 cups beef stock - 3 tomatoes, pureed or chopped Heat oil over med-high heat, season beef with salt & add to sear. Let them cook for a couple of min on each side just to get some colour, the high heat will help alot! Lower heat to med, add chopped onions and cook till translucent, 5ish min. Add galic & cook 1 min till fragrant. Add tomatoe paste, cook for 3-5 min until meat in coated, then all seasonings & royco. Mix well for 3-5min. Add beef stock & tomato puree, cover and let simmer on low-med heat for 30-50 min depending on the size of your meat (min was 35ish min) . Optional: remove lid for the last 10min and allow some of he liquid to evaporate for a thicker sauce! That's what I did :) Meat should be tender and not too chewy once ready! Kale Sukumawiki, serves 2-3  - 3 kale bunches, stems removed & roughly cut - olive oil, to cook in ( a better option for  veg)  - 1/2 large onion, diced - 2 tomatoes, diced - 2 tsp each: curry powder & cumin - 1 tsp each: paprika & cayenne - 1 tsp royco mchuzi beef flavour, mixed with water  Heat over med heat to cook onions until translucent. Add in tomatoes, royco & seasonings. Cook for a few min until tomatoes are soft then add kale. Kale cooks donw so you can do 1/2 portion first then the other. Lower heat and cover to allow steam to cook, 7-10min.   Cassava Ugali, serves 2 (or a hungry 1) - 1 cup cassava fiune cassava flour  - 1 cup water Boil 1 cup water with salt. Add in flour and vigoursly mix, a wooden spoon works great, turn and make sure to keep turning until no signs of uncooked flour - 3-7min. Take on & off heat if needed to avoud scorching pot.
