I don't understand why people don't include the vinegar percentage in recipes. It can vary so much—sometimes it's 2%, other times it's 12%. Without this detail, the recipes feel incomplete.

is it 100g of sugar or 100ml of sugar? Because we measure ml for liquids but then 100ml rarely corresponds to 100g of solids

I recently ate at a restaurant that pickled everything. one of us ordered vegetable lasagne..every single veg was pickled and sour/sweet. it was so gross 🥺
