@karens_cooking: Things I learned in culinary school: Rigatoni Carbonara ❤️ Ingredients: 12oz rigatoni 4 egg yolks at room temp 4 oz diced pancetta or guanciale 1/2 cup freshly grated pecorino 1/2 cup freshly grated parm Salt and black pepper Step 1- boil pasta in salted water Step 2- place diced pancetta in a cold pan, turn on medium heat and stir occasionally until the fat is rendered and the pancetta is crispy Step 3- in a bowl mix egg yolks with cheese Step 4- remove crispy pancetta, with pan still very hot add in black pepper, al dente pasta, and about 1/2 cup pasta water and mix well Step 5- right after, turn the burner off, add in the cheese mixture to the center and mix very well to combine, add back in the crispy pancetta Taste and season as needed with salt and black pepper Let me know if you have any questions 🫶🏻 #Recipe #pasta #carbonara #italianfood #cooking #athome #foodtiktok
