Wet your fingers, and fold the dough inward 4-5 times from all directions. Cover the bowl and let the dough rest for another 30 minutes or until it doubles in size. 4. Grease a 13 x 9 x 2” baking pan with olive oil, transfer the dough to the baking pan, stretch the dough out into a layer that covers the bottom of the pan, and let it rest in a warm place for another 30 minutes. 5. To make the peach cobbler topping, mix the sugar, brown sugar, all-purpose flour, ground cinnamon, ground nutmeg, and the butter until they turn into crumbs. Set aside. 6. Preheat the oven to 425°F. Sprinkle some more olive oil on the dough, place the peaches and then the crumbs evenly on top of the dough, and press your fingers into the dough so that the topping kind of sinks into it. 7. Bake at 425°F for 35-45 minutes or until the internal temperature reaches 190°F. Once the baking pan is cool enough to touch, transfer the Peach Cobbler Focaccia to cool. 8.
