Ingredients: * 2 1/2 lbs Ground Beef * 16 oz Can Kidney Beans * 2 Tbsp Olive Oil * 2 Large Green Peppers - Diced * 1 Large Yellow Onion - Diced * 6 Cloves Garlic - Minced * 1/2 Cup Fresh Chopped Parsley * 28 oz Can Diced Tomatoes * 15 oz Can Tomato Sauce * 1 1/2 tsp Oregano * 1/4 tsp Cayenne Pepper * 1 tsp Black Pepper * 3 tsp Kosher Salt * 2 tsp Cumin * 3 Tbsp Chili Powder * 20 oz Tomato Juice * Rice/Ditalini * Cheddar Cheese/Sour Cream Preparation: 1. Brown ground beef in a pan & add to slow cooker when it’s finished. Remove all remaining fat except one tablespoon from the pan. 2. Add the olive oil to the pan and add in the onion & green pepper. Sauté for 5 - 6 minutes & then add in the garlic. Continue to cook for 2 more minutes. 3. Remove the pan from the heat & add in both the seasoning mix and the parsley. Thoroughly combine. 4. To the slow cooker add in the tomato sauce, diced tomatoes, onion/pepper mixture, kidney beans & the tomato juice. 5. Stir well & cook on low for 8 hours or high for 4 hours. I find that the flavors come together better cooking on low for 8 hours. 6. Serve over rice or with ditalini & your favorite toppings.
