svíčková 🎀🍻 (tesim se na ceske experty kteri to umi nejlip🥰🌸😍) 1. cut bacon into "noodles" and let freeze for a little bit so it's easier to work with 2. cut approx. 2 onions, 4 big carrots, 4 parsnips, 1/2 of celery root meat: 1. make holes in your beef with a knife and put the bacon noodles in 2. tie with a string 3. season with salt and pepper 4. sear on all sides in a pan with oil 5. take the meat out of the pan sauce: 1. place the carrots, parsnips, and celery root into the pan with the rendered fat from the meat 2. let it sit in the pan for a while to brown the vegetables slightly 3. add butter and onions 4. add 2 tbsp sugar (i used brown but you can use normal) and let caramelize 5. add 3 tbsp vinegar and let evaporate 6. add 1,5 tbsp mustard 7. add 2 tbsp cranberries 8. add juice from about a half a lemon 9. put the meat to the sauce 10. if you want to take it to the next level you can let it marinate in fridge overnight (but you can also bake straight away:)) 11. add some water (i think i added about 700 ml) 12. add 2-3 bay leaves 13. bake at 150°C for about 3-4 hours 14. when ready take the meat and bay leaves out and blend 15. add some cream (i added approx. 250 ml) 16. in a pot mix 1:1 flour and butter to make a roux and put it in the sauce to bind it together dumplings: 1. mix 300ml milk (room temperature), 7g yeast, 1 egg, 500g flour and some salt 2. cut 2 buns and add to the dough 3. knead the dough 4. let double in size (approx. 1 hr) 5. divide into 2 dumplings 6. cook in salted water for 20 min and turn after 10 7. poke it with a toothpick to release excess steam 8. coat it with butter #dinner #dinnerinspo #cooking #czech #svickova #cookwithme
