@georginaelizat: Fusilli bucati alla vodka I have been CRAVING this recently so I had to make it. There’s a reason this is so viral, it is v v yum 2 cups / 220g dry (or fresh) pasta 25g (around 2 tbsp) salted butter 2 small shallots 2 garlic cloves 4 tbsp / 60g tomato paste 1 shot / 44ml vodka 1 1/4 cup / 300g double / heavy cream 1/3 cup / 80g pasta water 1/4 cup / 25g shaved parmesan Salt and pepper to taste Sprinkle of red chilli flakes, chopped basil and Parmesan flakes Boil your pasta in salted water until al dente (follow the instructions on your packet for timings). Add butter to a frying pan on medium-high heat, followed by the finely chopped shallots. Fry for a few minutes, until softened and then add the chopped garlic, cook for around 30 seconds. Then add the tomato paste and mix. Add the vodka and allow to cook off for around 30 seconds. Add the cream, mix and reduce the heat down to medium-low. Finish with the salt, pepper, parmesan and some pasta water. Taste at this point, adding more salt and pep to your taste. Leave on the heat to thicken the sauce or simply stir in the cooked pasta and serve in bowls. Finish with some more parmesan flakes, pepper, red chilli flakes, chives and basil.
