Chick-Fil-A Chicken Minis Copycat Recipe 🍗 For the Chicken Mini Bread: * 3/4 cup Warm Milk -> 1 cup ish * 1 tbsp. Instant Yeast * 1/4 cup Sugar * 1 Egg * 3 tbsp. Softened Butter -> 42g  * 1 tsp. Wait 10 min for yeast to activate and become foamy * Mix in flour, salt, egg. Use a stand mixer or hands to knead until smooth. If the dough is too tough, add a tbsp of milk at a time. If the dough is sticky, add a tbsp of flour at a time * Cover and let the dough rest and rise in a warm place for 1 hour or until the dough rise double Step 2: Marinate chicken * Cut chicken into small pieces. I think around 0.75in x 1.25in/piece is great * Marinate all in dill pickle juice for 1 hour (put in the fridge) Step 3: Divide the dough * Now that 1hr is up, roll the dough flat to 0.25 inch thick. Cut into strip then cubes. Each dough piece should be closer to looking like a square, rather than thin rectangular. Either 0.75in x 1.25in or 1in x 1.5in * Butter another pan, add all the rectangular bread pieces to the pan * Mix 2 tbsp of butter with 1/4 cup of honey. Brush on top of the buns * Cover and let them rise again for 1hr Step 4: Bread the chickens * There will be 2 bowls: wet and dry * Dry bowl: Flour, powder sugar, salt, pepper, paprika, onion powder, garlic powder, baking powder. Ratio: 1 cup of flour, 1 tbsp of sugar, 1tbsp baking powder, 1 tsp of each of the seasonings. For 3.6 lb of chickens, I ended up using over 3 times the above -> 3 cup of flour, 3 tbsp…, 3 tsp…. * Wet bowl: 1:1 ratio of milk and dill juice from the chicken marinate -> 1 cup of milk, 1 cup of dill juice, 1 egg, sprinkle of paprika powder in * Dry - Wet - Dry. Add chicken to the dry bowl, then wet bowl then dry bowl and put them on a tray Step 5: Bake the bread * Preheat the oven to 375F * Bake for 15 min or until the top is golden. I baked for 20 minutes but that’s bc my oven is weak. I took the bread out in the middle to brush more of that Butter+Honey mixture on top. Brush after baking as well Step 6: Fry the chicken * On Medium heat (a little over medium), add some beef tallow or lard to the pan * When the oil is hot, add chicken in. Fry until golden. The recommended internal temperature for chicken is 165°F (74°C) or you can have faith that the chicken is cooked thoroughly  * Put them on the rack when they are golden/brown Step 7: Make Chick Fil A sauce (or buy it) * I didn’t want to use store bought Chick fil a because I don’t want to consume high fructose corn syrup or soybean oil 😢 * Some recipes I found online. Some basic ingredients are: mayonnaise, bbq sauce, mustard, vinegar, sweetness like honey. My Chick fil a sauce came out a little too vinegary.
