Roasted Rib Stew This is the perfect weekend dinner for family or friends. The ribs are first roasted, then combined with vegetables to slowly braise on the stovetop, making a cozy comfort meal for fall and winter. For 4 servings, you will need: - 2-3 pounds of ribs - 1 diced onion - 2-3 diced carrots - 4-5 small potatoes, cubed - 1 can of chickpeas - 1 can of beans - 1 can of tomatoes - Salt and pepper - 1/4 tsp each of paprika, garlic powder, oregano, basil, cumin, salt, and pepper - Or any spice mix you like for ribs - 2-3 tbsp of olive oil Mix all the spices together. Rub the ribs with the spice mix and place them in a preheated oven at 400°F. Roast for about 20 minutes. Meanwhile, in a large heavy pan or Dutch oven, heat olive oil over medium heat. Add the onion and sauté for 5 minutes. Add the carrots and potatoes, and sauté for another 3-5 minutes. Stir in the chickpeas, beans with their juices, and tomatoes. Season with salt and pepper, and mix well. Place the roasted ribs into the pan with the beans and vegetables. Cover and cook on low heat for 40 minutes.
