I literally have watched like 5 videos on the ratio thing and still don’t understand. I’m so overwhelmed with the sourdough thing😭

You are the first person I’ve found that explains things in this much detail but still simple enough to understand!

When you say a big feed could you give me grams please?

Alyson Tam :
So would your 1:5:5 mean 10g starter, 50g flour and water? Everybody uses different grams and it’s so confusing.

I do 1:20:20 for maintenance and is perfect. I use only 1 gram of starter so minimal waste.

I can't get the bulk fermentation down. My timing is still so off. I've done 2 hours after my stretch and folds. And then 3 hours after my stretch and folds. My dough just doesn't look right. 🥺

I’ve been doing 1-1-2 ratio it makes my starter a lil stiffer but it rises and falls beautifully! I keep it in the oven w/the light on

Can I ask why this keeps happening to me? When I feed my starter at a 1:2:2 ratio, it doesn’t rise and stays very fluid, even though it’s usually strong and grows well with a 1:1:1 ratio. 🥺

Soooooo…. I have no sense of smell. Is there a visual indication of acidity? My I just started 5 days ago.

I haven’t been measuring, I’m just going off the consistency I’m looking for. My bread is good. I’m scared to measure now lol

So my starter smells good but doesn’t rise within 4-6 hours takes at least 12, would you do a big feed?

Can I ask your advice? I only make dough two days a week, usually back to back Tues & Weds. What ratio would be ideal for my daily maintenance feedings? Ideally I want to feed once per day

1What am I doing wrong? I started my started on 1/12. It hasn’t doubled in size yet but yesterday we got super close to being doubled. This morning, it was starting to fall and it had lots of bubbles

So how do I measure what’s in my jar to know how much is in it? Or just kinda eye it?
