Thanksgiving Sausage and Herb Stuffing 🦃🍞 This is my absolute favorite stuffing recipe. It’s addicting. Here’s how to make it: - 1 (1lb) stale loaf of bread (sourdough, french, italian) - 1 lb sweet italian sausage - 1/2 stick unsalted butter (4 tbsp) - 8 oz portobello mushrooms, finely diced - 1 large yellow onion, diced - 4-5 stalks celery, diced - Salt and pepper to taste  - 1/2 cup dry white wine (optional) - 8-10 cloves minced garlic, to taste - 1/4 cup fresh parsley - 2 tbsp fresh rosemary - 2 tbsp fresh thyme - 2 tbsp fresh sage - 2 cups chicken broth - 2 large eggs 1. Preheat the oven to 350°F. Tear the bread into 1-inch pieces. Spread out in single layer on a baking sheet and toast for 10-15 minutes, or until the bread is lightly browned and crisp. (This step can be done ahead of time—just let the bread cool and store in an airtight container until ready to use) 2. In a large Dutch oven or heavy-bottomed pot, add the sausage and cook over medium heat, undisturbed, for a few minutes to allow it to brown and form a nice crust. Cook until fully cooked through, about 5-7 minutes. Remove the sausage from the pot and set aside. 3. In the same pot, add the butter and melt it over medium heat. Add the mushrooms, onion, and celery, stirring occasionally. Cook for 10-15 minutes, or until the vegetables are softened and lightly browned. Season with salt and pepper to taste. 4. Add the wine to the pot, scraping up any browned bits from the bottom. Let the wine simmer and reduce by half, about 2-3 minutes. 

5. Lower the heat, pour in 1 cup of chicken broth, and add the garlic, fresh herbs (parsley, thyme, sage, rosemary), and cooked sausage. Stir to combine and cook for another minute. Remove from heat and let the mixture cool slightly. 6. Add the breadcrumbs to the pot and toss to combine. Taste and adjust seasonings if needed.
 7. In a separate bowl, whisk the eggs and the remaining 1 cup of chicken broth together. Pour over the bread and sausage mixture and toss to coat evenly. 8. Transfer the stuffing mixture to a greased baking dish and bake for 60 minutes, or until the top is golden brown and crispy.
