@pesky_fish: Like Bass, most of us are used to seeing Gilthead Bream as these tiny little farmed jobbies from Greece or Turkey, NOT the Wild silver bars that we land in the nets around the South West. The difference: Instead of the basic flavour of their long lost farmed cousins, these wild Gilts pack a whole spectrum of taste and texture. With sweet, delicate meat that complements the crispy, sea salt skin, they’re amazing to have filleted and pan fried. However, unlike the black bream, I always think you don’t want to add additional flavours when cooking. Just a really good butter and salt to serve with some rosemary roasted potatoes and a sharp, sweet-acidic salad. The simplicity is the reward for choosing such a beautiful fish.
