banana pudding🍌🍮 Recipe: Homemade nilla wafers: •113g unsalted butter •150g powdered sugar •2 eggs •1 tsp vanilla essence •170g all purpose flour •pinch of salt •1/4 tsp baking soda Custard: •3 egg yolks •60g granulated sugar •pinch of salt •25g cornstarch •360g whole milk •1 tsp vanilla essence •1-2 tbsp unsalted butter •3-4 bananas •200ml heavy cream (Nilla wafers): 1. In a bowl, combine butter and powdered sugar and whisk until pale and fluffy. 2. Add eggs one at a time and mix until incorporated. Add vanilla and mix. 3. Sift in flour, salt and baking soda and fold until just combine. 4. Pipe onto a tray and bake for 150°C preheated oven for 10-12 mins. (Custard): 1. In a pot combine egg yolks, sugar, salt and cornstarch. Mix until smooth. Add milk and mix again. 2. Whisk on low heat until thick. Turn off the heat and add vanilla essence and butter. Mix until smooth. 3. Transfer to a bowl and cover directly with cling wrap. Allow to cool. (Assembly): 1. In a separate bowl, whip heavy cream until stiff peaks. 2. Gradually add the custard and gently fold. Set aside. 3. In a tray, layer your wafers, sliced bananas and cream. Repeat and finish off with a layer of cream. 4. Top it off with sliced bananas and crushed wafers. Cover and refrigerate for few hours or overnight before serving. #bananapudding #magnoliabakery #dessert #baking #banana
