TERIYAKI CHICKEN THIGHS & SESAME SLAW that are perfect for meal prep! 😋🙌 This makes about 4 servings! What you need: - 1 cup brown rice - 2 cups water - 4 tbsp soy sauce - 1 tbsp honey - 1 tsp sesame oil - 1/2 tbsp minced garlic - 1/2 tsp minced ginger - 4 boneless skinless chicken thighs - 3 cups shredded red cabbage - 1 cup shredded carrot - 1/2 of a red onion, diced - 1/4 cup cilantro leaves, diced - 1 tbsp sesame oil - 1 tbsp lime juice - 1/2 tsp salt How to make it: - Add rice and water to a pot, cover and bring to a boil, then simmer until water has absorbed. - Add soy sauce, honey, sesame oil, minced garlic and minced ginger to a bowl with chicken thighs and toss to coat. - Grill chicken for 7 mins on both sides or until cooked through. - Add cabbage, carrot, red onion and cilantro to a bowl. Add sesame oil, lime juice and salt and toss well. - Separate rice, slaw and chicken thighs into containers, then garnish with sesame seeds and cilantro. Eat right away, or store in the fridge for 2-3 days.
