Grease and line an 8x8 pan with parchment paper. - In a bowl, combine the crumble topping ingredients with your hands until it’s crumbly. Don’t overmix. Set in the fridge while you prepare the batter. - In a medium bowl, combine the granulated sugar, flour, baking powder, salt, and cinnamon. Set aside. - In a large bowl, beat the egg, milk and melted butter until just combined. - Gradually add dry mixture to wet until just moist. Fold in the peach slices. - Pour the batter into the prepared pan.  - In a small bowl, combine the cinnamon sugar ingredients together. Spoon it on the batter and mix throughout.  - Sprinkle the crumble topping on top. - Bake for 70-80 minutes or until an inserted  toothpick comes out clean.
