Sweet and Sour Fish ( Escabeche ) Ingredients: For the Fish: • 1 whole Bakoko fish (cleaned and scaled) • Salt and pepper to taste • Cooking oil (for frying) For the Sauce: • 7 cloves garlic, minced • 2 red onions, sliced • 1 thumb-sized ginger, julienned • 1 bell pepper, sliced • 1 stalk celery, chopped • 1/3 cup vinegar • 1/3 cup water • 1 tsp chicken powder (or to taste) • 1/4 cup banana ketchup • 1/4 cup sugar • Pepper to taste • Slurry (1 tbsp cornstarch + 1cup water ) Instructions: 1. Prepare and Fry the Fish: • Season Bakoko fish with salt and pepper. • Heat oil in a pan and deep-fry the fish until golden brown and crispy. • Set aside on a plate lined with paper towel. 2. Cook the Sweet and Sour Sauce: • In a separate pan, sauté garlic and ginger until brown. •Pour in vinegar and let it boil for a few seconds (to reduce the sourness) • Add water, chicken powder, banana ketchup, sugar, and pepper. • Add Carrots. Simmer for 1–2 minutes. 3. Thicken the Sauce: • Slowly pour in the slurry while stirring continuously until the sauce thickens. • add the rest of the vegetables . 4. Assemble: • Pour the sweet and sour sauce over the fried fish. • Garnish with extra bell peppers or scallions if desired.
