#ad Elote Style Creamy Chicken Enchiladas with the help of @Philly Cream Cheese ! #PhiladelphiaCreamCheese is my go-to ingredient whenever I want to add the perfect creaminess to any dish! #Enchiladas Creamy Elote Chicken Enchiladas: 4 cups salsa verde 1 8-ounce block of Philadelphia Cream Cheese Oil for frying 20-24 Corn tortillas Shredded Rotisserie Chicken 2 cups corn kernels 1 tbsp chile lime seasoning 1 tsp garlic powder 1 tsp onion salt 1 tsp black pepper 2 cups shredded chihuahua cheese Mexican Crema, for serving Crumbled Cotija Cheese, for serving Chile Lime Seasoning, for serving 1. To a large sauce pan add the salsa verde and set to medium heat. 2. Once hot, add in the 8 ounce block of Philadelphia Cream Cheese and stir to combine until the cream cheese has fully melted into the salsa verde. Set aside. 3. To a large skillet, add in oil to cover the bottom of the pan and set to medium high heat. 4. One at a time fry the corn tortillas for 10-15 seconds per side & set aside on a plate. Continue with all tortillas. 5. In the same pan with a little bit of oil, add in the corn, all of the spices and sautee together for 4-6 minutes. 6. Pre-heat oven to 350 degrees. 7. To assemble the enchiladas, roll the corn tortillas with shredded chicken inside. Do this with all the tortillas and chicken. 8. In a 8x10 baking dish, pour in half of the creamy salsa verde, layer the rolled chicken stuffed tortillas over the sauce then pour over the rest of the creamy sauce. 9. Sprinkle over half of the sautéed corn & top with the shredded cheese. 10. Bake at 350 degrees for 15-20 minutes or until the cheese is bubbly and golden. 11. Top off the baked enchiladas with the remaining corn, a drizzle of Mexican crema, crumbled cotija cheese & a sprinkling of chile lime seasoning. 12. Serve immediately & enjoy!
