@georginaelizat: Cinnamon roll pancakes Viral for a reason, these pancakes give you all of the cinnamon roll joy without any of the hassle! 90g / 3/4 cup plain white flour 1 tsp baking powder 1/4 tsp salt 125ml / 1/2 cup milk 1 egg (or add another 1/2 tbsp oil if vegan) 1/2 tbsp vegetable/ coconut oil 1 tbsp caster sugar 1/2 tsp vanilla extract Cinnamon swirl: 1 tbsp cinnamon 60g / 1/4 cup butter (+ extra for frying) 140g / 2/3 cup sugar (preferably soft light brown but white will work) Frosting: 1 tbsp cream cheese 30g / 2 tbsp icing sugar 1 tbsp milk In a bowl, mix your melted butter, sugar and cinnamon. Add to a piping bag (you may want to keep this piping bag in a bowl of warm-hot water when you’re not using it to ensure that the butter stays melted). To a large bowl, add flour, baking powder and salt, mix. Then add the milk, egg, vegetable oil, sugar and vanilla. Whisk together until until a smooth batter forms (do not over whisk). Place a non-stick frying pan on low-medium heat and add some butter (around 1 tbsp). Add some pancake batter and allow to cook for around 15-30 seconds before cutting the piping bag and piping cinnamon mixture into the pancake in a swirl shape. I recommend actually putting the tip of the piping bag into the pancake rather than squeezing it on top. Add a lid on top of the frying pan, allowing the pancake to steam cook the top (this will prevent having to flip the pancake, which may burn the cinnamon sugar. Feel free to flip them if you prefer). Once cooked all the way through, place onto a plate and repeat until all of the batter is gone.
