@georginaelizat: Pumpkin pancakes May not be the perfect time of year for these, but I had to share because they are DELISH Ingredients 250g / 2 cups plain flour 1 tsp baking soda 2 tsp baking powder 270g / 1.1 cups pumpkin puree 2 tsp cinnamon 1/4 tsp nutmeg 1 egg 350ml / 1.5 cups milk 50g / 1/3 cup soft light brown sugar 2 tsp neutral oil (eg veg/ olive) Butter to fry the pancakes 1 handful pecans 1 scoop vanilla ice cream / whipped cream 4 tbsp melted Instructions In a blender, blend your pumpkin, milk, sugar, oil and egg until smooth. In a large bowl, mix the flour, baking soda, powder, cinnamon and nutmeg. Pour your wet mixture in and whisk until all combined. Heat your non-stick pan on a medium-high heat and add a small amount of butter (do this each time you add new batter). Pour around 1/3 cup pancake batter into the pan. Once cooked on one side (approx 2 mins) flip and cook on the other side. Serve right away with whipped cream, melted biscoff, pecans and a dash of maple syrup if you fancy.
