@sarah.hayroyan: Day 5 of 30 cozy family dinners: twice baked potatoes ✨ RECIPE -> ~ ingredients: -4 large potatoes -1/4 cup olive oil -1 tbsp sea salt -1/2 pound bacon, chopped -1/4 cup diced green onions + some for topping -1.5 tbsp garlic powder -1/2 cup butter -1/2 cup heavy cream -1/2 cup sour cream -1/2 cup shredded cheddar cheese + some for topping -1.5 tsp salt -1/2 tsp pepper ~ 1. Preheat oven to 425F. 2. Rub potatoes in olive oil and season with sea salt. Place on baking sheet and cook in oven for about an hour, until cooked through. Remove and set aside. 3. Crisp bacon and chop finely. Cut potatoes in half lengthwise and scoop insides into a medium bowl, leaving a thin layer in the potato shells so they keep their shape. 4. Add bacon, green onions, garlic powder, butter, heavy cream, sour cream, cheese, salt, and pepper to the bowl and mix well. I use a hand mixer so potatoes are fully mashed and mixed well, but by hand works too. 5. Scoop mixture back into shells, topping with cheese and green onions. Cook for an additional 15 minutes until cheese on top is melted and browned. Enjoy! ~ Nothing beats potatoes, let be honest. And twice baked potatoes?
