Cook the eggs using the sous-vide technique. 6. Make cuts in the shiitake mushrooms and then sauté them with shimeji mushrooms in olive oil, finishing with a sprinkle of coarse salt. 7. Remove the meat from the oven. Slice it into pieces and place on a plate, then brush with teriyaki sauce and torch it lightly. 8. In another pot, strain the broth through a sieve, adding miso paste and hondashi. Cook the spaghetti in this broth. 9. Assemble the dish: In a deep bowl, place the spaghetti, meat, mushrooms, sous-vide eggs, nori, pour over the broth, and sprinkle with green onions.
